At the helm of Sazón’s bold, flavour-driven kitchen is Andrew Walsh, a culinary visionary celebrated for his immersive, high-energy dining experiences. Formerly of Cure in Singapore—awarded a Michelin Star in 2021 and featured on The World’s 50 Best Discovery List—Walsh brings his signature blend of refined technique and storytelling to the heart of Bali.
Putu Gede (Tude)
Bringing a worldly perspective and deep Balinese roots to his role as Executive Sous Chef. Having honed his craft at leading resorts across Bali and in renowned kitchens in Peru, Brazil, and Italy, he blends fine-dining precision with heartfelt authenticity. At Sazón, Chef Tude reinterprets Mediterranean flavours through a Balinese lens — crafting expressive, ingredient-driven dishes that reflect both his island heritage and his global journey.
Madeline Francois
Bringing a wealth of international hospitality experience and genuine warmth to her role as Restaurant Manager, Madeline has built her career across Hong Kong’s dynamic dining scene before making Bali—an island she has loved since childhood—her home. Inspired by a family deeply rooted in hospitality, she began her journey at a young age and now leads Sazón’s front-of-house team with grace, ensuring every guest enjoys thoughtful service and a memorable dining experience.
