Formerly of Cure in Singapore—awarded a Michelin Star in 2021 and featured on The World’s 50 Best Discovery List—Walsh brings his signature blend of refined technique and storytelling to the heart of Bali.

Bringing a worldly perspective and deep Balinese roots to his role as Executive Sous Chef. Having honed his craft at leading resorts across Bali and in renowned kitchens in Peru, Brazil, and Italy, he blends fine-dining precision with heartfelt authenticity. At Sazón, Chef Tude reinterprets Mediterranean flavours through a Balinese lens — crafting expressive, ingredient-driven dishes that reflect both his island heritage and his global journey.
